Brewing guide: a sweeter V60 in four pours

This is the recipe we use behind the bar for most light roasts. It is deliberately simple: four even pours, no stirring, and a total brew time around three minutes.
What you need
15 g coffee, ground medium-fine
250 g water just off the boil (93–95 °C)
A V60 02 and a rinsed paper filter
The pours
Bloom with 50 g and wait 40 seconds. Then pour to 100 g, 175 g and 250 g, waiting for the bed to drop a little between each pour. Aim to finish pouring by 1:45 and draining by 3:00.
If it tastes sour, grind finer. If it tastes bitter or dry, grind coarser. Change one thing at a time.
